Chocolate Mint Tart

I made this delicioussssss tart for my besties housewarming party. Although my darling dog Bella ate the first one, I thankfully had a little (left overs….) in the freezer to avoid coming empty handed (although a bottle of wine PROBABLY would have been more presentable).

For the Crust:

1/2 cup of cashews
1/2 cup pecans
3/4 cup medjool dates, chopped
1/4 cup cacao powder
1/4 cup cacao nibs
1 tsp. vanilla
6 coffee beans
2 tbsp. filtered water

In a food processor, mix all ingredients into a moist dough.  Press the mixture in a 6″ tart pan and set aside

For the Filling:

2 1/2 cups cashews
1 cup mint leaves
1 cup water
1/3 cup agave (add more if you want it a little sweeter)
1 tsp. mint extract (add more to taste)
1 1/2 tsp. vanilla
pinch of celtic sea salt

In a food processor, combine all ingredients together until mint leaves are fully blended. The mixture may look a little “chunky”. Next blend in the next two ingredients listed below until the mixture is smooth. Taste to mixture and add accordingly.

3 1/2 tbsp. cacao butter
2 tbsp. coconut oil

Pour the mixture on the crust and allow it to set in the freezer for at least an hour. Enjoy!
